The pizza is called "Sfincione" in Italy - “Thick Sponge” translated. The dough base is spongy, a little dense and chewy.

Commonly, it's paired with tomato sauce, mozzarella, Parmesan, hard cheese (toma/caciocavallo) and pepperoni.
