00 Flour for Pizza

If you want to make authentic pizza dough at home, Speciale 00 is your go-to flour. 00 flour, an Italian reference to fine flour, is generally considered the best choice. A Neapolitan pizza is not a Neapolitan without it! The protein levels are high at 12%+ which helps to for an elastic binding within mixed dough. Additionally, the 00 fine flour, unlike more coarse flours, will ensure your dough is bubbly, airy and light.
