Spiral Mix Inversion Control
The mixer features inversion control to reverse the motor and spiral. This is especially useful for mixing together parts of your mix that should not be strung together (biga, autolysis, natural yeast refreshments, pre-dough).
If the spiral is reversed, it will not compress the dough downwards. As a result, it pushes the dough upwards to minimise stringing.
