What’s a Peel?
A peel is a thin sheet of steel. Other materials can be used. It’s used to transfer dough from a surface to oven or hot pan. The peel commonly has a handle to enable the baker to slide it under the worked dough. The dough can be slid off easily to avoid tearing and to preserve the shape and form.
