How to refresh the starter

Step 1: Lightly stir any surface separate in.

Step 2 - Put 25g of the starter (a tablespoon) into a jug or sterile jar.

Step 3 - Add to this 100g of water (use warm water at 35 °C). Mix well.

Step 4 - Stir in 100g of Strong White Bread Flour.

Step 5 - Leave the jar in a cool place until the mix has doubled in size (usually 6-8 hours).

Step 6 - Always remake the starter in a clean, sterile jar. Keep it covered, but not airtight

Step 8 - You should refresh your starter at least once a week

A great sourdough bread starts with a great sourdough starter. That’s why we’ve partnered with the Sourdough School to create a starter-growing kit that includes everything you need to make your own delicious, bubbly, aerated sourdough bread at home.

Our starter is made with a wild yeast culture that can be traced back over 115 years. Vanessa sourced the original starter from a traditional local French bakery when she was a child, and she’s been cultivating and feeding it ever since.

The culture is a living collection of yeast strains, so it needs to be fed with high-quality flour once a week. This will ensure an endless source of yeast for your sourdough bread and pizzas.

Refresh your sourdough starter right away

Your starter will need to be refreshed as soon as you receive it. Use the specially selected flour that comes with your kit.

How to refresh your starter

  1. Remove the starter from the refrigerator.
  2. In a clean bowl, combine 1 part starter with 1 part flour and 1 part water.
  3. Mix until smooth.
  4. Cover the bowl with plastic wrap or a lid.
  5. Let the starter sit at room temperature for 8-12 hours, or until it is bubbly and active.
  6. Once the starter is active, you can use it to make sourdough bread, pancakes, waffles, or other baked goods.

Important tips

  • Use the same type of flour that came with your starter. Using a different type of flour can alter the microbial composition of the starter and may affect its level of activity.
  • Keep your starter in the refrigerator between uses. This will slow down the fermentation process and help your starter last longer.
  • Refresh your starter every week or two to keep it active.
